Chickpea and Chard Curry for One
Cooking for one can be a challenge. But, by implementing a few of these money and time saving tricks, you can be sure to eat well and with plenty of variety. This recipe for Chickpea and Chard Curry is proof that cooking for one doesn’t have to be boring.
Mashed Potatoes with Carrots and Kale
I have officially given up feeling guilty for eating potatoes everyday.
A Different Kind of Hummus
Hummus has got to be one of the best snacks or appetizers out there. High in protein, fiber, and loads of essential minerals, it’s the perfect thing to have in the fridge everyday.
Summer Pesto Vegetable Gratin
Roasted tomatoes, fresh zucchini from the farmer’s market, artichokes, pesto. How could this possibly not be amazing?
